If you have a custom field that is text, you should see in the lower right corner of the text box what looks like 2 or 3 little lines. If you click and drag on that it acts like a re-sizing tool and will make the text box as big as you need to see the notes inside.
It is difficult to type a longer case note under a custom tab with the field of "text" because the area is not expanded to review what is written and to edit.
