Some appointments involve more than 1 individual that are participating in that activity. I think there should be an option to add more than one employee to an activity since there are many times where there are at least 2 individuals who are participating in the activity to fully encapsulate the total amount of employees that are helping with the activity.

This should be prioritized. In public health, we tend to have more than one employee attend visits. We also are tracking outreach events where multiple employees are in attendance. It would be nice to be able to see every employee that is part of the activity.
